One of the easiest to make and yet most delicious little treats available to man...and woman!
Last week I made a hundred or so of these little delights.
Pictured are white chocolate truffles in a pink coating and Oreo truffles with white chocolate drizzle. Yum mm mm mm!
Recipe for (melt in your mouth) Snow White Chocolate Truffles:
2/3 c whipping cream (I use heavy)
1 -1/2 lbs white chocolate, melted to 110 degrees F (approx. 4 1/2 cups)
1/2 tsp vanilla (good vanilla is best!)
Heat cream in a saucepan over low heat until it begins to steam; do not let it boil! Remove from heat and let stand for a bit. (Should still be very warm not cooled). Place melted chocolate into a bowl. Pour warm cream over chocolate and beat with a mixer until blended well. Add vanilla (or other flavor extract) and mix well. Cover and refrigerate at least two hours.
Shape into balls and then dip into tempered chocolate or coating.
You may also roll them into cocoa, nuts, coconut, etc.
(I usually pop them back into fridge to keep cool until I can dip into chocolate).
Yield: Approx. 60 truffles.

I love your Truffles Mom!! I loved them sooooooooo much that I just couldn't put them down!! I would sneak some and I even snuck one in my lunch!! :) Sorry that I ate a lot........
