Old-fashioned diner pancakes not dinner pancakes although these are so good you'll want to make them for breakfast, lunch, or dinner!
As we approach the beginning of school, I thought I would post some of our family-favorite pancake recipes! (Be looking for more to come).
You know, to spur on excitement for getting up in the wee small hours of the morning and making a hot, hearty, (and sometimes healthy) breakfast for the little (or big, young or old) ones that we love!
We do love these diner pancakes. They have a surprising ingredient, but don't let that fool you or scare you... it doesn't change the flavor of the pancakes, it just changes them into pancakes from yesteryear...
light, fluffy and flavorful.
The 'surprise ingredient' is fun to have on hand anyway - so be sure to give these a whirl!
These pancakes really are reminiscent of those found in the old-fashioned diners. They remind me of the "short stack" my dad would order when I was a little girl.
50's DINER PANCAKES
2 eggs
1 1/4 c milk
Beat together until light and fluffy, 3 minutes on high speed. (I use my KitchenAid).
3 T. melted butter
Stir in to egg/milk mixture
In another bowl, whisk together:
1 1/2 c flour (unbleached all-purpose)
3/4 tsp salt
2 tsp baking powder
1/4 c malted milk powder
Gently mix dry ingredients into the wet ingredients and let rest for a few minutes before frying.
Turn on the juke box and jitterbug your way through the kitchen of your pad with your favorite cool cats for some good eats.
Those pancakes look delicious!!! and taste delicious too!!!

Ha, ha, Jonathan...Nathan has had them and does love them. He hasn't been gone that long. :)
Though it does feel like he's been gone forever at times.

Looks like you took this from The Original Pancake House menu. Wish I liked pancakes. I ate TOO MANY when I was a kid, I think I had a pancake eating contest with my brother, and I haven't been able to eat any since that day.
