Aunt Mar. One of my friends posted a link on her blog with a recipe calling for spaghetti squash, and I have been keeping my eye out for spaghetti squash ever since. Now I NEED to find one. Where do I go?

One thing that I've loved learning to cook with are squashes! I don't think we ever ate them when I was growing up. And I love them. Especially butternut squash soup. Or anything zucchini.

I will say that I did try spaghetti squash a couple of years ago as some kind of savory dessert. (Just add butter and brown sugar?) I did not like that. At all. Veggies are veggies and should be treated as such.

I've heard of this forever, but have never tried it. (and didn't know how ot actually make it) And I've been working on upping our Vitamin A so this will be perfect.

You should be able to find it near or with the other squash. It should be by the butternut and acorn squash. I'm sure you saw it in the photos, try to find one that is a nice shape. It will be bright yellow and oblong. Make sure it seems to be 'heavier than it looks'. No soft spots or weird texture to the skin.

I made it tonight and we LOVED it! Even Dennis had seconds and he claims not to be a squash fan. I was hoping to have leftovers for lunch tomorrow, but it's not going to happen. We did add a little brown sugar at the end and it was all perfection! Can't wait to make it again.
