I think if I made this, I wouldn't be able to tell Tyler what was in it.

BUT. I might be able to get Rich to eat this. He loves cheese. And he seems to be okay with eggs and cheese. When I get feeling a little better, I think I'm going to give it a shot.

Question: Could you replace the sour cream with greek yogurt? (Would the souffle still work?)

That is such a great question!
I really believe Greek yogurt would work! It would need to be a very stiff and creamy Greek yogurt - a true Greek yogurt.
From what I understand about baking with yogurt instead of sour cream is that you should add baking soda to it...
not sure if that also applies to Greek yogurt since the consistency is more like that of sour cream.
I have always used light sour cream in this recipe (light Daisy sour cream). The Greek yogurt would be more healthy than that for sure. I could try it and let you know! :) Love you!!
